sold out

*This is handmade and one-of-a-kind*

  • Blade length: in. 8” (203 mm)

  • Cutting edge length: 7-½” (165 mm)

  • Total length: 12-½” (317.5 mm)

  • Blade height (at heel): 1-⅞” (327 mm)

  • Blade: Seastorm mosaic Damascus, hand forged from 1080, and 15n20 high carbon steels.

  • Construction: Hidden tang with bolster.

  • Bolster: Wrought iron from 1800’s timber raft bolts.

  • Handle: Local big-leaf maple (dyed blue)

A bunka is a Japanese general-purpose chef's knife. Like the santoku, a bunka is a knife of many talents that can easily handle all the basic kitchen cutting tasks. Slightly shorter than the standard chef's knife, the bunka is light, agile, and very easy to maneuver. There's plenty of belly curve to enable rocking cuts, which just adds to the bunka's versatility.

The blade is hand-forged from David's own Damascus, combining 1080, 1095, and 15n20 carbon steels. This ensures the knife will have excellent edge holding and chip resistance. The complex Turkish Twist pattern was created by forging six separate bars of twist pattern damascus and alternating the direction when combining them into one billet. A distal taper ensures perfect balance. The spine and choil are nicely rounded for comfort. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation.

The Japanese-inspired half-octagonal handle combines gaboon ebony and buffalo horn. The handle is faceted at the top and rounded at the base. This shape is among the most comfortable of traditional Japanese handle styles. This is a knife you won't want to put down! Like other knives, this knife should not be put in the dishwasher.

Excellent work throughout!
